Picatta without the Chicken

Hungry for a bit of chicken picatta, but don’t want to “ruffle the feathers” by using poultry? Seitan is a vegan protein source made from wheat gluten. Seitan is more chewy and springy than other meat alternatives, making it a wonderful substitute in dishes that call for poultry.

Vegan Chicken Picatta Picatta without the Chicken (recipe) by Patricia Sheehan perfectly balances salt and lemon flavors to create a wonderful dish for a summer evening that spares all animal products. Now that is something we can all toast.

Hi! My name is Kristina Neville and I’m a junior at Northwest Highschool in Germantown, MD. I am in a special program at my school called Ulysses where we do a huge research project throughout junior and senior year with a final presentation in the “Ulysses Fair.” FOr my project I am concentrating on animal slaughter and vegetarianism and I need your help! I want to be able to hand out pamphlets and different information to promote being vegetarian and I was wondering if there was anyway I could have some informational pamphlets or anything else to hand out to students throughout my presentation. Thank you so much for your time! Let me know what you could do to help 🙂

It is so exciting that you are going to promote vegetarian diets at your school. On our website you can find many downloadable handouts under the Resources tab, and then choose Frequently Asked Questions.
I would recommend that you use the Vegetarian Teens Handout and the Healthy Tips for Meatless Meals, these both provide tips for preparing healthy vegetarian/vegan meals.
      Great work, keep it up.
