Spicy Kale Slaw

Yield: 4 – 1 cup servings

Ingredients

  • 4 cups Kale, thinly sliced, any variety
  • 1 medium Carrot, peeled and grated
  • ½ cup Pecans, chopped
  • ¼ cup Golden raisins
  • ½ cup Vegenaise® (vegan mayonnaise)
  • 1 Tbsp Raw apple cider vinegar
  • 2 Tbsp Sugar
  • ½ tsp Ground allspice
  • ½ tsp Dried oregano
  • ½ tsp Dried thyme
  • ½ tsp Paprika
  • 1/8-1/4 tsp Cayenne pepper
  • ¼ tsp Curry powder
  • ¼ tsp Salt
  • ¼ tsp Black pepper
  • 1/8 tsp Nutmeg
  • 1/8 tsp Cinnamon
  • 1/8 tsp Ground clove

Directions

  1. Add all ingredients to a large bowl and toss until kale is evenly covered.
  2. Cover and chill for at least one hour.

    I’m not a vegetarian but I like to try all kinds of recipes. When I found this one, I was excited because I’ve been looking for a way to try Kale and this sounds really good. Thanks for sharing!
