For those of us in northern climates, May marks the beginning of warmer weather, cookouts in the backyard, and, best of all, the summer salsa season. Although many think of this dish as a spicy showcase for tomatoes, other fruits and vegetables such as tomatillos, cucumbers, papaya, and peaches can also be used to make this delicious dish. So, next time you feel like indulging in a little salsa, skip the processed variety and try making this unique papaya and tomatillo salsa.
