Great to see this information on ground cherries. I discovered them last year at my local farmers market and bought some plants from the same farmer this year. They have a lovely subtle pineapple flavor. These are a great little fruit to introduce to kids, easy to pick and easy to eat.

What about Meatless Monday? That is a great way to engage your husband, here is resource with simple vegetarian meals you could try.
http://vegetariannutrition.net/vegetarian-diets/transitioning-to-a-plant-based-diet/
I know many couples where one is vegetarian and one is not. Some make vegetarian meals at home, but when they go out the each makes their own food choices. Other couples try to create meals that can go either way. Tacos can be created with beans or with an animal product, the toppings are all vegetarian. Pasta is another that can be created meatless and not.
Start slowly, and let your husband see how tasty vegetarian foods can be, it is also a great time to introduce your son to different foods.

I am seriously condsidering changing over to a vegitarian diet, for several reasons. Mostly for spiritual reasons and the belief that the body is the temple and should be respected. I feel that a vegitarian diet would be the most respectful to my body. However, my family is not really supportive of this decision. My husband is a definate meat eater and is afraid that if I start eating a vegitarian diet that we wont be able to enjoy meals together anymore. I do not want to "convert" him into becoming vegitarian, but I also want this to be an easy transition on him as well as myself, seeings how I am the cook of the family, and also our 41/2 year old son. Do you have any suggestions?

Kristina,
It is so exciting that you are going to promote vegetarian diets at your school. On our website you can find many downloadable handouts under the Resources tab, and then choose Frequently Asked Questions.
I would recommend that you use the Vegetarian Teens Handout and the Healthy Tips for Meatless Meals, these both provide tips for preparing healthy vegetarian/vegan meals.
Great work, keep it up.
